Fifi has been with Cabarete Coffee Company since the very beginning, in 2009. Born and raised in Thomassique, in the Central Plateau of Haiti, bordering the Dominican Republic, Fifi immigrated to neighboring Sosua in her 20s before quickly moving to Cabarete. One of three siblings, Fifi’s family was vastly affected by the Earthquake that struck Haiti in 2009 and played a large role in Cabarete Coffee Company’s inaugural fundraiser to support relief efforts. A proud mother to four, both of Fifi’s daughters have been involved in Mariposa programs. 

As the head cook at Cabarete Coffee Company, Fifi attributes her foundational knowledge of cooking to her mother. At a young age, Fifi would cook alongside her mother who would show her how to prepare and cook their meals. However, Fifi claims that she learned even more when she began working at Cabarete Coffee Company, as she was exposed to new recipes and cuisines, including many foods that she was trying for the first time. At home Fifi enjoys cooking traditional Dominican and Haitian meals (they are very similar), and believes that rice is and will always be her staple food. Fifi’s favorite place to be at Cabarete Coffee Company is behind the stove making eggs, omelets, and burritos. She is very appreciative of her colleagues who are always helpful and with whom she has a great working dynamic. Fifi aspires to continue learning in the kitchen as she loves to learn and knows there are still so many more recipes to be learned.
